Sirloin steak with anchovy butter

Main ingredient: Sirloin beef slices, anchovy fillets

60 g anchovy fillets (Anchovies) pickled in salt, 100 g soft butter, 2 tsp. lemon juice, Salt, Pepper, freshly-milled, 2 entrecôtes (sirloin beef slices, each 3 cm thick), 2 tblsp. oil, 1/2 bunch of parsley, 2 tblsp. green olives
